Jairo Arcila is no stranger to Rave. You might recognise his name from our Rare Range, but this time he and the team at La Pradera have gone further.
​
Pink Bourbon cherries are fermented for 48 hours with fresh peaches and wine yeast; the peaches bring the juicy stone fruit character, while the wine yeast helps create even more complexity during fermentation.
​
Co-ferments can easily overpower the coffee underneath. This one jumped off the cupping table. Expect peach cordial, pick ‘n’ mix sweetness and delicate honey blossom.

Jairo Arcila is a third-generation coffee grower from the rolling Andean mountains of Quindío, Colombia. After spending 40 years managing dry mills for one of Colombia's largest coffee exporters, he retired to focus on something a little closer to home: growing exceptional coffee on his own farms.

At Santa Mónica, near Armenia, coffee has become a proper family affair. Jairo works closely with his sons, Carlos and Felipe, who run the La Pradera processing facility. Together, they've dialled in everything from picking and sorting to processing, while introducing more unusual varietals including Pink Bourbon, Java, Papayo and Geisha.

That combination of Jairo’s decades of experience and the next generation’s approach to specialty coffee has allowed the family to keep pushing what they can produce at Santa Mónica  and this Microlot is a brilliant example of just how far they can push the limits of coffee.

 ~ Process ~
 
Selection:
• The ripest Pink Bourbon cherries are hand-picked at Santa Mónica
• Cherries travel to the La Pradera processing centre in GrainPro bags
• On arrival, they're floated and carefully sorted to remove low-density and unripe cherries
 
Fermentation:
• Whole cherries undergo a 48-hour anaerobic fermentation
• Fresh peaches are added to build those distinct stone-fruit flavours
• Wine yeast helps drive fermentation, developing aromatic complexity and depth
• The cherries are then pulped and thoroughly washed to remove the remaining mucilage
 
Drying & Stabilisation:
• The coffee is slowly dried, with regular turning and careful temperature monitoring
• Drying continues until the beans reach a moisture content of 9.5–11%
• Water used during processing is recycled and treated through a specialist filtration system before being irrigated into vetiver grass beds
