Easy Panzanella Salad With Butter Beans: This is just summer in a bowl. Juicy tomatoes, cucumber and lots of fresh basil are tossed together with creamy butter beans and chunks of bread that soak up all of the lovely dressing. Sumac Roasted Cauliflower With Crispy Butter Beans & Almond Dressing: One of our favourite salads at DE HQ at the moment. The butter beans are roasted until crispy, then served with charred cauliflower, sweet, sticky shallots, tangy sumac and a creamy almond dressing. One-Pan Tomato & Saffron Butter Beans: One for the nights when you want something comforting without spending ages in the kitchen. Cherry tomatoes are cooked down with saffron and smoky paprika to make a rich sauce before the butter beans are stirred through.
