Hey ,

Ready for another Microlot?

⚡ Drop #0006 Colombia Nestor Lasso Yellow Papayo... just 375 bottles available ⚡

For our sixth Microlot, we’re heading back to the laboratory (well, farm) of Nestor Lasso at Finca El Diviso in Huila, Colombia.

This time, Nestor’s experimenting with Yellow Papayo, a rare Colombian varietal, and his seriously complex Advanced Natural process; a carefully controlled series of fermentation, temperature changes, drying and even rehydration.

The result is every bit as wild as the process. Expect crisp green apple, tropical fruit sweetness and a boozy hit of spiced rum.

#0006 Colombia Nestor Lasso Papayo Advanced Natural - 150g

Colombia Nestor Lasso Papayo Advanced Natural - 150g

Process: Advanced Natural
Producer: Nestor Lasso
Altitude: 1750m
Region: El Diviso, Pitalito, Huila
Varietals: Yellow Papayo

⚡️375 BOTTLES ONLY⚡️

Nestor Lasso is part of a new generation of Colombian coffee producers doing things differently. He grew up around coffee in southern Huila and, five years ago, joined forces with his brother, Adrián, and fellow producer, Jhoan Vergara, to transform his family farm, Finca El Diviso.

Sitting at 1,750 metres above sea level in the mountains of Pitalito, Finca El Diviso has become a playground for coffee experimentation. Working alongside Cata Exports, Nestor and the team have been developing new ways to ferment and process their coffees, constantly tinkering with what happens between cherry and cup. And earning international recognition along the way.

Nestor’s curiosity and meticulous approach have helped push what’s possible with Colombian coffee… and this Yellow Papayo is a brilliant example of where all that experimentation can lead.

 ~ Process ~

Selection:
• Yellow Papayo cherries are selected at 24–28 Brix to make sure they’re extra ripe and packed with natural sugars
• The cherries are floated in cold water to remove lower-density fruit

Fermentation:
• Whole cherries undergo 36 hours of oxidation at around 25°C
• They’re moved into an oxygen-free environment for 24 hours at 16–18°C, followed by another 24 hours of oxidation
• Next comes 48 hours of submerged fermentation, with the liquid
released by the cherries recirculated through the coffee
• Finally, the cherries undergo a 30-minute thermal shock at 50°C

Drying & Stabilisation:
• A portion of the coffee is dried to 18–20% moisture, then rehydrated and mixed 50/50 with fresh cherries before depulping
• The coffee is dried in a dehumidifier for around 60 hours, until it reaches 18% moisture
• Drying is paused while the coffee rests in bags away from light for another 60 hours
• Finally, drying continues until the coffee reaches a stable 11% moisture
